I just have it mocked up right now. The LEDs are taped to the bottom of the counter and the wires are.... we'll just say... uninsulated. I ordered some bezels for the LEDs, and I've got some JST connectors to wire the lights up in a more permanent way.
I'm thinking about making the switch work like a touch lamp. Has anybody worked with that kind of circuitry before? Anybody sell a kit, or will I have to go hunting at goodwill?

Perhaps you can have it turn on the transformer that powers the low voltage DC for the LEDs. Needs some study. But you can't beat the price.

Larry, thanks for the product tip! I'll definitely order extras if I get any. Phil could probably find a use for them as well.
These are running on a 24VDC wall wort that I had laying around. It's not permanent, but it worked for the mock up. They're two parallel circuits with 4 LEDs each in series with some drop resistors (I forget the values at the moment). I think in the final version, I'll use a lower voltage supply (one that's smaller too).
The AC adapter under a sink had me worried a little bit, but the bulbs are mounted through a wooden counter beneath the vessel sink. Nothing actually touches the sink, drain, or supply lines, so as long as it's a low voltage circuit on a GFCI I'm not terribly worried about it.

I have seen a shower head that turns water colors with LED, I think it was linked to the water temperature. It probably was on some HGTV home show or maybe "I want that" show?

Amazon sellers are pretty tricky... I found some that were cheaper, but there was only one available at that price and it wasn't eligible for free shipping. The one that Larry found charges you $4.99 shipping PER UNIT!
